Healthy Courgette Snack - Perfect For Lazy Days

The last few days have been quite lazy for me: I've only been enjoying the (lovely for this time of the year!) weather, writing blogposts and working at the bakery. Whenever I'm at home doing nothing in particular I like snacking - and I like the unhealthy snacks a little bit too much so I'm always thinking of new alternatives. I made this courgette snack a while ago and I've been making it quite often so I thought I'd share it with you!

You don't need many ingredients for this little recipe and you'll probably have it all already! Don't forget to wash the courgette, by the way.

The ingredients + how to
- 1 courgette
- olive oil
- pepper & salt

1. Slice the courgette diagonally in thick slices (about 7mm)
2. Put them in a large bowl and pour olive oil over it
3. Mix it up so every slice of courgette is covered in oil
4. Sprinkle some pepper & salt over the mixture

You will now need to plug in your grill and grill every slice of courgette until it's not tough anymore (and until it starts to smell really lovely). You'll know when it's ready!

If you usually like grilled/wokked vegetables you'll surely like this little snack. It's great when the slices of courgette are still hot but it's still pretty nice when it's all cooled down. I personally like it when it's a little bit more salty and peppery so I add quite a bit of  those two ingredients. You can also add cheese or other spices - the possibilities are endless, you have just got to find what you like best! Oh, and don't forget to let me know if you ever try this out! X
