Whenever I have the time and empty stomach for making a delicious and more time-consuming breakfast in the morning, I choose to make pancakes. This morning was that kind of morning and when I browsed my kitchen for the usual ingredients, I realized that we didn't have any eggs.. so I wouldn't be able to make my usual pancakes!
I didn't want to give up (and I wanted my pancakes, damn it!) - so I tried to make my pancakes without the eggs, and they were even better than my regular pancakes. I decided to share this recipe with you - which turns out to be completely vegan when I leave out the eggs. Enjoy!
What you need
- 2 cups of flour
- 2 cups of water
- 1 cup of your favourite soy milk
- 1 tablespoon of olive oil
- half a teaspoon of salt
- olive oil to replace the margarine you'd normally heat your pan with
Grab a big bowl, and put the flour, water, soy milk, tablespoon of olive oil and the salt in it. Mix it until it is a smooth substance. Put your pan on the stove and heat the olive oil. When it's hot (not earlier! It'll be gross when the olive oil's still cold!) pour the pancake mixture in the pan and wait till the edges are a bit darker - and then turn the pancake around. When it's nicely dark like in the picture above, put it on a plate - bake the rest of the pancakes and then enjoy your breakfast (or dinner! Whatever you like!)
I usually eat my pancakes with bananas (vegan!) or Nutella (not so vegan). Other suggestions are fruit, syrups and honey! It's whatever you like and whatever you're used to.
