Good day everybody! I recently cooked a very delicious dinner and I can’t wait to share it with you! It’s 100% vegetarian and if you pay attention to one specific ingredient I’ll mention later on, completely vegan as well. If you’re into vegetable-y meals, make sure to give this one a try as it’s amazing!
1 paprika (sweet pepper)
250g cherry tomatoes
2 teaspoons curry powder
6/8 whole grain wraps (buy vegan ones if you’re on a vegan diet!)
Pre-heat the oven to 200 degrees Celsius. Cut your egg-plant, sweet pepper and onion into small squares – not too small though! (approximately 1cmx1cm). Pop them into a baking dish. Sprinkle some olive oil, pepper and salt and curry powder on top. Mix this so the powder and pepper and salt cover most of your vegetables and put this in the oven for about 12 minutes!
Start cutting your cherry tomatoes into halves and drain the chickpeas. Get your baking dish out of the oven and add the tomatoes and chickpeas to your vegetables and mix this once again, making sure it looks like a (hot) salad! Pop this in the oven for another 8 minutes.
You can now start making your wrap-spread. This is what you bought the avocado for! Remove the core and peel it. Squash the avocado and squeeze one lemon into your little mixture. Mix this and you now have your wrap-spread!
Heat your wraps (in a pan or in the microwave) and smear them with the avocado spread. Grab a spoon and put the contents of your baking dish on top of your wraps. You can roll the wraps up but I usually prefer eating them un-rolled, because it's just so much easier. Enjoy!
