Hello there! If you know me, you know that I'm a huge fruit enthusiast. I drink smoothies on a daily basis and I'd breathe watermelon if I could. Discovering new fruits on the market very close to me is something I love doing as well - so when I found out about the existence of mini kiwis my fruity heart started beating a bit faster.
The NERGI® kiwi-berries look like slightly bigger grapes on the outside, kiwis from the inside - but actually are berries. You don't need to peel the berries before eating them so it's a great snack to carry in your lunchbox. The berries are sweet and taste like kiwis, however - they're not as sour as regular kiwis. They actually taste better than normal kiwis - they're a lot easier to swallow without a very ugly face. ;-)
NERGI® sent me some of the berries and I decided to create a little recipe. I love fruity salads and this one was a huge success - my father, who usually doesn't really like (summer) fruits, actually cleared his plate!

Giving quantities for salads is quite difficult - but I'd say, for one person, use three hands full of lettuce, three tangerines, half a handful of walnuts and about eight kiwi-berries.
Use two tablespoons of yoghurt for the dressing, add one teaspoon of olive oil, sprinkle some pepper and salt on top - and add some chives.
Looks great, right?! It tasted great as well. The lettuce gives the salad a fresh taste, the walnuts add some bite, the yoghurt dressing makes it a bit spicier and the kiwi-berries add sweetness.
Here's another suggestion. This is not my own photograph. Use the berries and a few cucumber slices to make a lovely refreshing drink.
I had this salad for lunch a few days ago and looking at the photographs actually makes me hungry again. Whoops.. well, it's a good thing I have some kiwi-berries left. If you ever decide to recreate this recipe, let me know!
